Our Wines : Ethical - Tasteful - Organic

Why " ethical "? Because we reason our practices as best we can. Soil work by horse or straddle carrier. Manual harvesting, no systemic treatments, pesticides, or herbicides in the vineyard. No additives in the wines. Natural yeasts, no filtration, natural corks, and very little SO2.

Why " tasteful "? Because respectful intervention of the soil in the vineyard and the absence of oenological input in the vineyard is essential for the expression of the terroir in the wine.

Why organic ? And especially biodynamic ? Because it's an exciting and holistic approach to how we work at La Vieille Chapelle. Holistic in its human dimension (the pleasure of working and welcoming in the healthiest possible environment), plant, mineral, animal, and cosmic...

All our wines have been certified organic / Ecocert since 2013 and biodynamic / Demeter since 2017.

Our wines are available in their differences and characters:

  • Friends' wines with "Les Grands Blancs - Tradition", Amuse-Gueules (dry white and rosé), the Tradition cuvée from Chateau de la Vieille Chapelle (red)
  • The " well-bred " with "Les Grands Blancs - Réserve (dry white)", the Reserve cuvée for Chateau de la Vieille Chapelle (red) "Les Merlots de Baudet" and "Absolem"
  • The " rebels" and natures from pre-phylloxera vines and forgotten grape varieties with the "Bouchalès Merlots" vintage, the "Amis & Associés" vintage.

Amuse-gueules (Rosé)

Appellation: AOC Bordeaux and Vin de France

Grape variety – Blend: 100% Merlot

Vinification: Pressed rosé. Fermentation with indigenous yeasts. Vinified and aged in stainless steel vats. Unfiltered, unfined wine.

Tasting: Red fruit nose, dense palate. Very good acidity for this vintage.

Average annual production: 2600 bottles (75 cl)

Food and wine pairing: Salmon (Graved Lax), aperitif, strawberry tartlet

Amuse-gueules (White)

Appellation: AOC Bordeaux and Vin de France

Grape variety – Blend: 100% Sémillon

Vinification: Fermentation with indigenous yeasts. Vinification in traditional stainless steel vats. No control of malolactic fermentation by adding SO2. Fining with Bentonite. Unfiltered wine. Between 35 and 60 mg/L of total SO2.

Tasting: Nose of ripe, exotic fruit and apricot. Dense, long, fresh and tense palate.

Average annual production: 2,500 to 3,500 bottles (75 cl)

Food and wine pairing: Cheese, poultry, seafood and foie gras.

Les Grands Blancs

Appellation: AOC Bordeaux (White Dry)

Grape variety – Blend: 100% Sémillon

Vinification: Fermentation with indigenous yeasts. Vinified and aged in French oak barrels (Berthomieu). No SO2 added for malolactic fermentation. Fining with bentonite. Unfiltered wine.

Tasting: Beautiful nose of ripe fruit, dense palate. Very smooth and even woody notes. Notes of apricots, honey, almonds and hazelnuts.

Average annual production: 3,500 bottles (75 cl)

Food and wine pairing: Cheese, poultry, seafood and foie gras.

Cuvée Tradition (Red)

Appellation: AOC Bordeaux Supérieur

Grape variety – Blend: 80% Merlot / 20% Cabernet Franc. 30 years old

Vinification: Fermentation with indigenous yeasts. Vinified and aged in raw concrete vats. Little racking. Unfined, unfiltered wines. Low SO2 content (between 20 and 35 mg/L of ttl).

Tasting: Straightforward and well-balanced Bordeaux, with flavorful tannins and aromas of ripe red fruits. Fleshy and aromatic on the palate.

Average annual production: 15,000 bottles (75 cl) + Magnums

Food and wine pairing: Mediterranean salad and cold cuts.

Cuvée Réserve (Red)

Appellation: AOC Bordeaux Supérieur

Grape variety – Blend: 80% Merlot / 20% Cabernet Franc (50 years old)

Vinification: Fermentation with indigenous yeasts. Vinified and aged in raw concrete vats. Aged in French oak barrels (Berthomieu) for 6 to 10 months. Never new barrels. No fining, no filtration. Low SO2 content (between 35 and 45 mg/L).

Tasting: Bordeaux Supérieur with a dense color. We love its tannins and red fruit aromas. The roundness of Merlot and the elegance of Cabernet Franc.

Average annual production: 15,000 bottles (75 cl) + Magnums and Double Magnums

Food and wine pairing: Chocolate cake, grilled red meat and duck breast.

Les Merlots de Baudet

A small plot of Merlot planted by Mr. Baudet in 1940!

Appellation: AOC Bordeaux and Vin de France

Grape variety – Blend: 100% Merlot. A plot planted by Mr. Baudet in 1940, who gave his name to this vintage!

Vinification: Fermentation with indigenous yeasts. Vinified and aged in raw concrete vats. Aged in French oak barrels (Berthomieu) for 6 to 10 months. Never new barrels. Unfined, unfiltered wine. Low sulfite content (between 25 and 40 mg/L).

Tasting: Complexity with a velvety and fruity first taste, followed by crisp tannins. Very nice length.

Average annual production: 10,000 bottles (75 cl)

Food and wine pairing: Chocolate cake, grilled red meat and duck breast.

Natural Wine (no added SO2)

Appellation: AOC Bordeaux and Vin de France

Grape variety – Blend: 2/3 Merlot - 1/3 Bouchalès. Pre-phylloxera vines (planted before 1860)

Vinification: Vinification in raw concrete vats. Aging in French oak barrels (Berthomieu) for up to 12 months. Never new barrels! No added SO2.

Tasting: The Merlot brings the smoothness, the Bouchalès the acidity and verticality.

Average annual production: 1,000 bottles (75 cl) + Magnums

Food and wine pairing: Chocolate cake, grilled red meat, duck breast and a Cuban cigar.

Bouchalès-Merlots

Natural Wine (no added SO2)

Appellation: Table Wine / Vin de France

Grape variety – Blend: 65% Bouchalès / 25% Merlot / 10% other rare and historic Bordeaux vines.

Vinification: Fermentation with indigenous yeasts. Vinified and aged in raw concrete vats. Aged in old 400-liter French oak barrels for up to 8 months. No sulfites added. Unfined, unfiltered wine. 2019 Primeur wine.

Tasting: Fresh, crisp, lively, and tense wine. Deep, fine, and persistent tannins. The Bouchalès brings acidity and freshness, while the Merlots add depth and roundness.

Average annual production: 700 to 2,000 bottles (75 cl)

Food and wine pairing: Mediterranean salads, lobster and grilled fish with olive oil.

Absolem

Vinification: Fermentation with indigenous yeasts. Vinified and aged in raw concrete vats. No sulfites added. Unfined, unfiltered wine.

Tasting: Fresh, crisp, lively, and tense wine. Deep, fine, and persistent tannins. The Bouchalès brings acidity and freshness, while the Merlots add depth and roundness.
