Our organic wines

Why " ethical "? Because we reason our practices as best we can. Soil work is done by horse or straddle tractor. Harvesting is done by hand, and there are no systemic treatments, pesticides, or herbicides in the vineyard. No additives are used in the wines. We use natural yeasts, no filtration, natural corks, and very little SO2.

Why " free "? Because respectful intervention in the vineyard and the absence of oenological inputs in the vineyard is essential for the expression of the terroir in the wine.

Why organic ? And especially biodynamic ? Because it's a fascinating and holistic approach to how we work at La Vieille Chapelle. Holistic in its human dimension (the pleasure of working and welcoming guests in the healthiest possible environment), its plant, mineral, animal, and cosmic dimensions...

All our wines are certified Organic / Ecocert since 2013 and biodynamic / Demeter since 2017.

Our wines come in all shapes and sizes, each with its own unique characteristics:

  • Wines from friends including "Les Grands Blancs - Tradition", Amuse-Gueules (dry white and rosé), and the Tradition cuvée from Chateau de la Vieille Chapelle (red)
  • The " well-bred " wines include "Les Grands Blancs - Réserve (dry white)", the Réserve cuvée for Chateau de la Vieille Chapelle (red), "Les Merlots de Baudet" and "Absolem"
  • The " rebels" and natural wines from pre-phylloxera vines and forgotten grape varieties with the "Bouchalès Merlots" cuvée, the "Amis & Associés" cuvée.

Appetizers (Rosé)

Appellation: AOC Bordeaux and Vin de France

Grape variety – Blend: 100% Merlot

Winemaking: Press rosé. Fermentation with indigenous yeasts. Vinified and aged in stainless steel tanks. Unfiltered and unfined.

Tasting notes: Aromas of red fruit, dense palate. Very good acidity for this vintage.

Average annual production: 2600 bottles (75 cl)

Food and wine pairing: Salmon (Graved Lax), aperitif, strawberry tartlet

Appetizers (White)

Appellation: AOC Bordeaux and Vin de France

Grape variety – Blend: 100% Sémillon

Winemaking: Fermentation with indigenous yeasts. Traditional stainless steel tank vinification. No malolactic fermentation controlled by the addition of SO2. Fined with bentonite. Unfiltered wine. Between 35 and 60 mg/L of total SO2.

Tasting notes: Nose of ripe fruit, exotic fruit and apricot. Palate dense, long, fresh and taut.

Average annual production: 2,500 to 3,500 bottles (75 cl)

Food and wine pairing: Cheese, poultry, seafood and foie gras.

The Great Whites

Appellation: AOC Bordeaux (White Dry)

Grape variety – Blend: 100% Sémillon

Winemaking: Fermentation with indigenous yeasts. Vinified and aged in French oak barrels (Berthomieu). No added SO2 to control malolactic fermentation. Fined with bentonite. Unfiltered wine.

Tasting notes: Beautiful nose of ripe fruit, dense palate. Very well-integrated and harmonious oak. Notes of apricots, honey, almonds and hazelnuts.

Average annual production: 3,500 bottles (75 cl)

Food and wine pairing: Cheese, poultry, seafood and foie gras.

Cuvée Tradition (Red)

Appellation: AOC Bordeaux Supérieur

Grape variety – Blend: 80% Merlot / 20% Cabernet Franc. 30 years

Winemaking: Fermentation with indigenous yeasts. Vinified and aged in raw concrete tanks. Minimal racking. Unfined, unfiltered wines. Low SO2 content (between 20 and 35 mg/L total).

Tasting notes: A straightforward and well-balanced Bordeaux, with flavorful tannins and aromas of ripe red fruit. A full-bodied and aromatic palate.

Average annual production: 15,000 bottles (75 cl) + Magnums

Food and wine pairing: Mediterranean salad and charcuterie.

Reserve Cuvée (Red)

Appellation: AOC Bordeaux Supérieur

Grape variety – Blend: 80% Merlot / 20% Cabernet Franc (50 years old)

Winemaking: Fermentation with indigenous yeasts. Vinified and aged in raw concrete tanks. Aged in French oak barrels (Berthomieu) for 6 to 10 months. Never new barrels. No fining, no filtration. Low SO2 content (between 35 and 45 mg/L).

Tasting notes: A Bordeaux Supérieur with a deep color. We love its tannins and red fruit aromas. The roundness of the Merlot and the elegance of the Cabernet Franc.

Average annual production: 15,000 bottles (75 cl) + Magnums and Double Magnums

Food and wine pairing: Chocolate cake, grilled red meat and duck breast.

Baudet's Merlots

A small plot of Merlot planted by Mr. Baudet in 1940!

Appellation: AOC Bordeaux and Vin de France

Grape variety – Blend: 100% Merlot. A plot planted by Mr. Baudet in 1940, who gave his name to this cuvée!

Winemaking: Fermentation with indigenous yeasts. Vinified and aged in raw concrete tanks. Aged in French oak barrels (Berthomieu) for 6 to 10 months. Never new barrels. Unfined and unfiltered wine. Low sulfite content (between 25 and 40 mg/L).

Tasting notes: Complex with a velvety and fruity first impression, followed by crisp tannins. Very long finish.

Average annual production: 10,000 bottles (75 cl)

Food and wine pairing: Chocolate cake, grilled red meat and duck breast.

Natural wine (no added SO2)

Appellation: AOC Bordeaux and Vin de France

Grape variety – Blend: 2/3 Merlot - 1/3 Bouchalès. Pre-phylloxera vines (planted before 1860)

Winemaking: Vinification in raw concrete tanks. Aged in French oak barrels (Berthomieu) for up to 12 months. Never new barrels! No added SO2.

Tasting notes: Merlot brings smoothness, Bouchalès brings acidity and verticality.

Average annual production: 1,000 bottles (75 cl) + Magnums

Bouchalès-Merlots

Pre-phylloxera vines, planted before 1860. Free-rooted!

Natural wine (no added SO2)

Appellation: Table Wine / French Wine

Grape variety – Blend: 65% Bouchalès / 25% Merlot / 10% other rare and historic Bordeaux vines.

Winemaking: Fermentation with indigenous yeasts. Vinified and aged in raw concrete tanks. Aged in old 400-liter French oak barrels for up to 8 months. No added sulfites. Unfined and unfiltered. A primeur wine for 2019.

Tasting notes: A fresh, crisp, lively, and taut wine. Deep, fine, and persistent tannins. The Bouchalès grapes contribute acidity and freshness, while the Merlot grapes provide depth and roundness.

Average annual production: 700 to 2,000 bottles (75 cl)

Food and wine pairing: Mediterranean salads, lobster and grilled fish with olive oil.
