Organic, ethical, frank wines, to gulp to gulp to gulp...

Why “ethical”? because we reason our practices as best we can. Ground work by horse or straddler. Manual harvest, no systemic, pesticide, herbicide in the vineyard. No input into the wines. Natural yeasts, no filtration, natural corks, and very little SO2.

Why “francs”? Because intervention that respects the soil in the vineyard and the absence of oenological input in the vineyard is essential for the expression of the terroir in the wine.

Why organic? and especially bio-dynamic? as it is an exciting and holistic approach to the way we work at the Vieille Chapelle. Holistic in its human dimension (the pleasure of working and welcoming in the healthiest possible environment), plant, mineral, animal, and cosmic...  

All our wines have been certified Organic / Ecocert since 2013 and bio-dynamic / Demeter since 2017.

Our wines are available in their differences and characters: 

  • The wines of friends with "Les Grands Blancs - Tradition", the Amuse-Gueules (dry white), the Tradition cuvée from Chateau de la Vieille Chapelle (red) and the "Grand Rosé"
  • The "well-breds" with "Les Grands Blancs - Réserve (dry white)", the Reserve cuvée for Chateau de la Vieille Chapelle (red) and "Les Merlots de Baudet"
  • The "rebels" and natures from pre-phylloxera vines and forgotten grape varieties with the "Bouchalès Merlots" vintage, the "Amis & Associés" vintage.

The Great Whites (Tradition)

  • Appellation: AOC Bordeaux
  • Grape variety - Blend: 100% Sémillon
  • Vinification: Fermentation of indigenous yeasts. Vinification in traditional stainless steel vats. No control of the Malo by adding SO2. Bonding with Bentonite. Unfiltered wine. Between 35 and 60 mg / L of total SO2.
  • Tasting: Nose of ripe fruit, exotic and apricot. Dense, long, fresh and tense palate.
  • Average annual production: 2,500 to 3,500 bottles (75 cl)
  • Food pairing: Cheese, poultry, seafood and foie gras.

Les Grands Blancs (Reserve)

  • Appellation: AOC Bordeaux (White Dry)
  • Grape variety – Blend: 100% Sémillon
  • Winemaking: Fermentation with native yeasts. Vinified and aged in French oak barrels (Berthomieu). Without addition of SO2 for Malo control. Bentonite bonding. Unfiltered wine. 
  • Tasting: Beautiful nose of ripe fruit, dense palate. Very melted and homogeneous oak. Notes of apricots, honey, almonds and hazelnuts. 
  • Average annual production: 3,500 bottles (75 cl)
  • Food and wine pairing: Cheese, poultry, seafood and foie gras.
  • Vintages available: 2006, 2007, 2008, 2009, 2010, 2011, 2012, 2014, 2015, 2018, 2020

Château de la Vieille Chapelle (Tradition)

  • Appellation: AOC Bordeaux Supérieur
  • Grape variety – Blend: 80% Merlot / 20% Cabernet Franc. 30 years
  • Winemaking: Fermentation with native yeasts. Vinified and aged in raw concrete vats. Little racking. Unfined, unfiltered wines. Low SO2 content (between 20 and 35 mg/L ttl).
  • Tasting: straight and well-balanced Bordeaux, tasty tannins, with aromas of ripe red fruits. Fleshy and aromatic mouth.
  • Average annual production: 15,000 bottles (75 cl) + Magnums
  • Food and wine pairing: Mediterranean salad and charcuterie.

Château de la Vieille Chapelle (Réserve)

  • Appellation: AOC Bordeaux Supérieur
  • Grape variety – Blend: 80% Merlot / 20% Cabernet Franc (50 years old)
  • Winemaking: Fermentation with native yeasts. Vinified and aged in raw concrete vats. Aged in French oak barrels (Berthomieu) between 6 and 10 months. Never new barrels. No fining, no filtration. Low SO2 content (between 35 and 45 mg/L).
  • Tasting: Superior Bordeaux with a dense color. We love its tannins, its aromas of red fruits. The roundness of Merlot and the elegance of Cabernet Franc. 
  • Average annual production: 15,000 bottles (75 cl) + Magnums and Double Magnums
  • Food and wine pairing: Chocolate cake, grilled red meat and duck breast.
  • Vintages available: 2007, 2008, 2009, 2010, 2012, 2014, 2015, 2018, 2019

Les Merlots de Baudet

  • A small parcel of Merlot planted by Mr. Baudet in 1940!
  • Appellation: AOC Bordeaux and Vin de France
  • Grape variety – Blend: 100% Merlot. A plot planted by Mr. Baudet in 1940, which gave its name to this cuvée!
  • Winemaking: Fermentation with native yeasts. Vinified and aged in raw concrete vats. Aging in French oak barrels (Berthomieu) between 6 and 10 months. Never new barrels. Unfined, unfiltered wine. Low sulphite content (between 25 and 40 mg/L).
  • Tasting: Complexity with a velvety and fruity first mouth, followed by crunchy tannins. Very nice length. 
  • Average annual production: 10,000 bottles (75 cl)
  • Food and wine pairing: Chocolate cake, grilled red meat and duck breast. 
  • Vintages available: 2005, 2006, 2007, 2008, 2009, 2010, 2012, 2014, 2015, 2016, 2018

  • Grape variety - Blend: 65% Bouchalès / 25% Merlot / 10% other rare and historic Bordeaux vines.
  • Vinification: Fermentation of indigenous yeasts. Vinified and aged in raw concrete vats. Aged in old French oak barrels of 400 liters for up to 8 months. No added sulfite. Unpinned, unfiltered wine. Early wine for 2019.
  • Tasting: Fresh, crisp, nervous and tense wine. Deep, fine and persistent tannins. Bouchalès brings acidity and freshness, Merlots bring depth and roundness.
  • Average annual production: 700 to 2,000 bottles (75 cl)
  • Food pairing: Mediterranean salads, lobster and grilled fish in olive oil.

Grape variety – Blend: 1/3 Bouchalès - 1/3 Merlot - 1/3 Cabernet Franc

Tasting: Fresh, crisp, nervous and tense wine. Deep, fine and persistent tannins. The Bouchalès brings acidity and freshness, the Merlots bring depth and roundness. 

Average annual production: 700 (75 cl)

Food and wine pairing: Mediterranean salads, lobster and grilled fish in olive oil.
